Our perception of the quality of something is impacted by what we’re exposed to. For instance, if we start out with something that is of high quality, it can be hard to switch to something else that’s inferior. Since we’ve been exposed to the superior, we immediately see the differences, and are aware of its deficiencies of the inferior.

But if we start out with something inferior, and never know anything different, we may not even realize how much better it could be. And over time, we may even acquire a like or taste or desire for it, even to the point where we may pass over something that is superior in order to have what’s become familiar.
